My Go-To Anti-Inflammatory Green Juice

Hey everyone!

It’s Sunday. What are you up to today?

Do you ever have those nights where you go to bed at a decent time, but you’re completely awake for a few hours, just tossing and turning? That has been me the last few nights, and I can’t figure out why. I could NOT sleep at all! What do you do when you can’t sleep?

I was reading an article the other day that said you should get up and do something – like read, clean, or watch TV for a while, because you want your body to know that bed = sleep. I guess you don’t want it to get used to being wide awake there. (: I also read that diffusing Cedarwood essential oil can help, and has helped me in the past.

Whenever I don’t put in a good night of sleep, I like to start the day with some green juice. I already know what you’re thinking. But what about the FIBER? I agree that it’s great to eat whole fruits and veggies as much as you can. I have some gut health issues (from taking unavoidable antibiotics, followed by contracting a serious infection in my colon – C Diff, and developing intolerance to histamines, which are produced during digestion), so it’s actually a perfect way for me to get nutrients into my body without it having to work too hard. I don’t recommend JUST having the juice, though. You should pair it with some protein and fat, like a hardboiled egg and a slice of avocado.

If you don’t have a juicer, you can add all the ingredients in a blender and drink it as a smoothie, OR blend it and strain through a cheese cloth. You can also keep the leftover pulp and make it into crackers, or throw it into a stirfry or soup later that day.

This is the juicer I have, and I love it. Husband got it for me at Bed Bath and Beyond a few years ago when I was really sick and had no appetite. It’s around $300, but you can always use a 20% off there. It’s a masticating juicer or cold-press juicer, which means it extracts more nutrients that centrifugal juicers, which are more common and cheaper. Masticating juicers also produce less heat and less oxidation, which means less breakdown of enzymes. If you’re planning to juice greens, you DEFINITELY want a masticating juicer.

Anyway, enough about juicers. Let’s get to the recipe! I choose to buy all ingredients organic except the lemons, since I’m not using the peel. I’m very sensitive to chemicals, so organic works for me. The bunches of kale and chard were $0.98 each at Sprouts the other day! And if you can’t buy all organic, that’s totally fine! Work with what ya got!

You Will Need:

-2 stalks celery*
-1/2 lemon, peeled
-1/2 small green apple*
-1 stalk fennel, or 1/6 of the bulb
-1/2 large cucumber
-1 inch knob of ginger, peeled
-2 stalks of kale
-2 stalks of chard
-1/2 cup coconut water

Chop the fruits and veggies into 1-2 inch pieces, and juice. Run the 1/2 cup coconut water through your juicer at the end. It helps clean out any stuck pieces, and makes your juice stretch a little more. Juicing can get pricey!

*Dirty Dozen are fruits or vegetables that have the highest pesticide and chemical residues when grown conventionally.

I like to garnish my juices because they feel so much fancier, like I could be drinking this from a cruise ship in the Caribbean right now. Lemon wedges, cucumber wedges, celery stalk, fennel stalk… I drew my garnish inspiration from a Bloody Mary today. (: haha!

This is my favorite coconut water right now. I love that it’s in a glass bottle, and Foodbabe says it’s organic and not from concentrate!
