Vegan Almond Chocolate Fudge

The other night, husband and I went for a drive around our new town, looking for a non-chain coffee shop. Personally, I would have just Googled it or looked on Yelp, but he likes to discover things organically, which is always fun (if I’m forced to). I’m a planner at heart, so it’s hard for me to do that, knowing we could end up at a 2-star place when there’s an amazing place nearby with lavender lattes.

We didn’t find a coffee shop, but we did find the most incredible rainbow I’ve ever seen. It was absolutely huge and incredibly bright; these pictures don’t do it justice at all. Of course, we pulled over, and I just happened to have my Nikon with me. Lucky. This landscape is only about two minutes from where we live. Double lucky.

Everything is super green because it’s been raining non-stop for weeks.

And what better way to top off a rainbow sighting than with a delicious fudge recipe? There’s nothing quite like a batch you can throw together in just a few minutes. But to have it be a fudge that’s actually ALMOST GOOD FOR YOU and full of healthy fats?!

If you’re a true paleo or vegan veteran, I bet you have these ingredients in your pantry right now.

 

You Will Need:

-1/4c coconut oil
-1/2c almond butter
-3T raw cacao powder
-2T maple syrup
-3/4t vanilla extract

Blend them in your food processor and freeze for at least an hour in silicone molds. If you don’t have molds, spray a glass casserole dish with coconut oil spray or line with parchment paper, freeze for an hour, and cut. Store these in your freezer until you eat them.

These aren’t overly sweet, and they’re definitely a bit softer/creamier than regular fudge texture… so don’t expect an exact fudge replica. But you’ll feel great knowing you’re eating something that has some nutritional value (:
